There are quite a few good quality copper cookware products available in the market.
Good quality copper cookware, pots and pans will withstand the daily rigours of any kitchen. They are also very affordable so that anyone who likes to cook can enjoy preparing a meal in the ultimate cooking medium: Copper cookware, pots and pans.
Some detractors say that it takes a lot of "Hard Work" to keep copper cookware clean. Not so - after use, I simply clean my copper pots and pans as I would any other item and put them away.
After a while, the copper takes on that golden brown patina look that gives my kitchen a warm feeling. Of course you can always polish your copper cookware. Modern cleaning products, such as metal cleaner's available in your local grocery store make the job very easy.
Good copper cookware has the following characteristics:
1. It's made from solid copper sheet which provides the highest thermal conductivity.
2. Copper fry pans, saute pans and crepe pans, sauce pans and casseroles should be 2.5mm thick copper (including the tin lining).
3. Good copper cookware should not be judged by it's weight as handles (cast iron or brass) can weigh more than the copper the pan is made of.
4. Copper cookware should use tin as a lining. Apart from silver, tin is the closest metal that matches copper in thermal conductivity, and is non reactive to acidic foods.
5. It should have the tin applied by using the hand wipe method, and it should be a thick coating of tin. I have pots and pans made more than 20 years ago using the hand-wiping method and they are still ok. In essence, it depends on how you treat your cookware, and the frequency of usage. As a rule of thumb, when all the scratches where the copper shows through, add up to the area of a 10 cent piece it is time to retin.
